Eating differently gets much easier when you stop deciding what to eat three times a day.
That’s one reason I like having a handful of simple meals I can repeat. Eggs. Chicken. Beef. Fish. Vegetables. A few basic ingredients that can become several different meals without requiring a complicated recipe every night.
If you’re trying to eat fewer highly processed foods or lower your carbohydrates, you don’t need to replace your entire kitchen overnight. Start with one week.
Below is a simple seven-day plan, the recipes, and one grocery list to shop from.

Don’t Change Everything at Once
Shop for one week. Try the meals. Notice which ones you’d actually make again.
You don’t need to overhaul your pantry, throw anything out, or commit to eating this way forever before you’ve even tried it. One week tells you a lot more than a plan you never start.
Build Meals Around a Few Basics
Most of these meals come down to a few basics: protein, vegetables, and simple ingredients you can mix and match. Eggs and bacon. Chicken and greens. Salmon and roasted vegetables. Once that pattern feels familiar, you can swap ingredients based on what you have, what’s on sale, or what you’re actually in the mood for.
Make It Easy Enough for a Wednesday
Food plans tend to fall apart on the night you get home tired and don’t want to cook for an hour.
A few things help: grill or bake more chicken or ground beef than you need for one meal so leftovers cover another day. Keep a couple of fast options on hand — a can of tuna, a bag of mixed greens, boiled eggs — for the nights nothing else happens. Use what’s already cooked instead of starting from scratch every time.

The 7-Day Low-Carb Meal Plan
Day 1 – Monday
Scrambled Eggs with Sautéed Spinach and Bacon Ingredients: 2 eggs, 1 cup spinach, 2 slices bacon, salt, pepper Instructions: Cook bacon until crispy, set aside and chop. In the same pan, sauté spinach until wilted, set aside. Scramble eggs, season with salt and pepper, then add spinach and bacon back in and serve.
Grilled Chicken Salad with Avocado, Cucumber, and Olive Oil Dressing Ingredients: 1 grilled chicken breast, 1/2 avocado, 1/2 cucumber, olive oil, salt, pepper Instructions: Grill chicken breast and slice into strips. Combine avocado, cucumber, and chicken on a plate. Drizzle with olive oil, season with salt and pepper.
Baked Salmon with Roasted Brussels Sprouts Ingredients: 1 salmon fillet, 1 cup Brussels sprouts, olive oil, salt, pepper Instructions: Preheat oven to 400°F. Drizzle olive oil over Brussels sprouts, season, and roast 20–25 minutes. Season salmon with salt and pepper, bake 12–15 minutes until cooked through.
Day 2 – Tuesday
Bacon and Avocado Egg Muffins Ingredients: 2 eggs, 2 slices bacon, 1/2 avocado Instructions: Cook bacon until crispy, chop into small pieces. Whisk eggs and pour into a muffin tin, add bacon and avocado chunks. Bake at 350°F for 15–20 minutes.
Tuna Salad with Mixed Greens, Olive Oil, and Lemon Dressing Ingredients: 1 can tuna, 1 cup mixed greens, 1 tbsp olive oil, 1 tbsp lemon juice, salt, pepper Instructions: Drain tuna and place in a bowl. Mix with greens, olive oil, lemon juice, and season with salt and pepper.
Grilled Steak with Steamed Green Beans Ingredients: 1 steak (your choice), 1 cup green beans, olive oil, salt, pepper Instructions: Grill steak to desired doneness. Steam green beans until tender, drizzle with olive oil and season.
Day 3 – Wednesday
Omelette with Mushrooms, Onions, and Sausage Ingredients: 2 eggs, 1/4 cup sliced mushrooms, 1/4 cup diced onions, 1 sausage link (cooked and crumbled), salt, pepper Instructions: Sauté mushrooms and onions until tender. Add crumbled sausage and cook through. Whisk eggs, pour over the mixture, and cook until set.
Grilled Chicken Breast with Roasted Vegetables Ingredients: 1 chicken breast, 1 cup mixed vegetables (carrots, zucchini, etc.), olive oil, salt, pepper Instructions: Grill chicken breast to desired doneness. Roast mixed vegetables with olive oil, salt, and pepper at 400°F for 20 minutes.
Baked Chicken Thighs with Cauliflower Mash Ingredients: 2 chicken thighs, 1 head cauliflower, 1 tbsp butter, salt, pepper Instructions: Bake chicken thighs at 375°F for 35–40 minutes. Steam cauliflower until tender, then mash with butter and season.
Day 4 – Thursday
Scrambled Eggs with Smoked Salmon and Avocado Ingredients: 2 eggs, 1/2 avocado, 2 oz smoked salmon, salt, pepper Instructions: Scramble eggs, season with salt and pepper. Serve with avocado slices and smoked salmon.
Turkey and Avocado Lettuce Wraps Ingredients: 4 slices turkey breast, 1/2 avocado, lettuce leaves, salt, pepper Instructions: Slice avocado and layer on turkey slices. Wrap in lettuce leaves and season.
Ground Beef Stir-Fry with Broccoli and Zucchini Ingredients: 1 lb ground beef, 1 cup broccoli florets, 1 zucchini (sliced), olive oil, salt, pepper Instructions: Brown ground beef, season with salt and pepper. Add broccoli and zucchini and sauté until tender.
Day 5 – Friday
Bacon and Eggs with Sautéed Bell Peppers Ingredients: 2 eggs, 2 slices bacon, 1 bell pepper, salt, pepper Instructions: Cook bacon until crispy, set aside and chop. Sauté bell pepper in the same pan until tender. Scramble eggs and combine with bacon and pepper.
Chicken Caesar Salad Ingredients: 1 grilled chicken breast, 1 cup romaine lettuce, 2 tbsp Caesar dressing (recipe below), salt, pepper Instructions: Grill chicken breast and slice into strips. Toss with romaine and dressing.
Grilled Shrimp with Roasted Asparagus Ingredients: 1 lb shrimp, 1 bunch asparagus, olive oil, salt, pepper Instructions: Grill shrimp until pink and cooked through. Roast asparagus with olive oil, salt, and pepper at 400°F for 15 minutes.
Day 6 – Saturday
Scrambled Eggs with Sautéed Mushrooms and Onions Ingredients: 3 eggs, 1/4 cup sliced mushrooms, 1/4 onion (diced), 1 tbsp butter or olive oil, salt, pepper Instructions: Sauté onions until soft, about 2–3 minutes. Add mushrooms and cook until tender, about 3 minutes. Whisk eggs with salt and pepper, pour into the skillet, and scramble until fully cooked.
Grilled Chicken with Mixed Greens and Avocado Ingredients: 1 chicken breast, olive oil, salt, pepper, 1 avocado (sliced), 2 cups mixed greens, 1 tbsp olive oil and 1 tsp lemon juice for dressing Instructions: Grill chicken 6–7 minutes per side. Toss greens with olive oil, lemon juice, salt, and pepper. Slice chicken over the salad and add avocado.
Zucchini Noodles with Beef Bolognese Sauce Ingredients: 1 lb ground beef, 1 zucchini (spiralized), 1/2 cup diced tomatoes, 1/4 onion (diced), 2 cloves garlic (minced), 1 tbsp olive oil, 1 tsp dried oregano, 1 tsp dried basil, salt, pepper Instructions: Sauté onion and garlic 2–3 minutes. Brown ground beef, breaking it up as it cooks. Stir in tomatoes, oregano, basil, salt, and pepper, and simmer 10 minutes. Sauté spiralized zucchini in olive oil 2–3 minutes. Serve sauce over zucchini noodles.
Day 7 – Sunday
Bacon and Avocado Breakfast Salad Ingredients: 2 slices bacon, 2 cups mixed greens, 1 avocado (sliced), 1 boiled egg (sliced), 1 tbsp olive oil, 1 tsp lemon juice, salt, pepper Instructions: Cook bacon until crispy, about 4–5 minutes per side, then crumble. Combine greens, avocado, and boiled egg. Top with bacon, drizzle with olive oil and lemon juice, season, and toss.
Chicken Caesar Salad with Homemade Caesar Dressing Ingredients: 1 grilled chicken breast (sliced), 2 cups romaine lettuce (chopped), 2 tbsp homemade Caesar dressing, 1 tbsp grated Parmesan Instructions: Grill chicken and slice. Toss romaine with dressing, top with chicken, and sprinkle with Parmesan.
Grilled Salmon with Sautéed Spinach and Roasted Carrots Ingredients: 1 salmon fillet, olive oil, salt, pepper, 2 cups spinach, 1 tbsp butter, 2 carrots (cut into sticks) Instructions: Grill salmon 4–5 minutes per side. Sauté spinach in butter until wilted. Roast carrots with olive oil, salt, and pepper at 400°F for 20–25 minutes.
Homemade Caesar Dressing Ingredients: 1/2 cup mayonnaise, 2 tbsp Dijon mustard, 2 tbsp fresh lemon juice, 2 tsp Worcestershire sauce, 1 garlic clove (minced), 1/2 cup grated Parmesan, salt, pepper, olive oil (optional, to thin) Instructions: Combine mayonnaise, mustard, lemon juice, Worcestershire, and garlic until smooth. Stir in Parmesan, season with salt and pepper. Thin with olive oil if desired. Keeps in the fridge up to a week.

At the end of the week, look back and ask: which three to five meals would I actually eat again?
Those become the start of your regular rotation — the meals you don’t have to think about because you already know you like them and know how to make them. That’s usually more useful than a brand-new plan every week.
